The Secret's in the Spinach

I LOVE these brownies! They’re simple to make, and if you don’t know there’s spinach in them, then you seriously don’t know that there’s spinach in them! Try them out at your next party to wow your guests, or make them just for you!

Ingredients:

3 cups (90g) Loosely-packed spinach leaves

¾ cup (190ml) Milk (dairy, almond, soy, whatever you want!)

1 cup Unrefined cane sugar

2 TBsp Coconut oil, melted

1 1/3 cups (165g) Whole wheat flour

½ cup (60g) Cocoa powder

1 tsp Baking powder

¼ tsp Salt

½ cup (75g) Dark or milk chocolate chips

* Optional: hemp seeds, nuts, or coconut to sprinkle on top

Directions:

Preheat the oven to 350°F (180°C). Grease an 8x8 inch baking pan with coconut oil. Combine the spinach and milk in a food processor and blend until smooth. Empty into a bowl and whisk in the sugar and melted coconut oil (the coconut oil might form some chunks as it cools, that’s ok, just mix it up!). In a separate bowl, sift together the flour, cocoa powder, baking powder and salt. Add this to the wet ingredients, stirring until you have a thick batter. Fold in the chocolate chips. Spread the batter into the prepared pan, sprinkle the top evenly with hemp seeds/nuts/coconut (optional) and bake for 35 minutes (or until a toothpick inserted into the edge of a brownie comes out clean—it’s fine if it’s still slightly moist in the center, and make sure that you didn’t insert directly into a chocolate chip or it will NOT come out clean). Leave to cool, then cut into small squares and serve!
